I made this one a few weeks ago, and I’m just now getting around to posting it here because I’ve been busy writing about other things (hooray!).

You’re free to be as elaborate with toppings as you like with this recipe (I kept it pretty basic with just some salsa, as you can see in the picture); the only essential things are the onions, peppers, and chicken. One thing to keep in mind is that the chicken will create a lot of smoke if you blacken it in the skillet, so it’s best to only do this recipe outdoors on a grill or in a well ventilated kitchen (I know, we’re moving into late fall now so it’s not really great grilling weather anymore, but there’s always the spring).
